Chicken Burgers + My First Lettuce Harvest!

Don’t you love it when you make something that tastes so incredibly good and you don’t feel bad about it because its healthy?!  I love when that happens.  No doubt this would be “cleaner” if I had omitted the cheese, but….who the heck wants to omit cheese.


First, throw this into a food processor:

  • 4 oz. wilted spinach
  • 1/2 small onion
  • 1 clove of garlic
  • 2 green onions, roughly chopped



Try not to drool into the food processor when your kitchen becomes overwhelmed with the smell of fresh garlic and onion.  Then, stir this mixture into 1 lb. ground chicken  and add:

  • 2 T. balsamic vinegar
  • 2 t. soy sauce
  • 1 t. lemon juice
  • 1/2 t. chili powder
  • 1/4 c. shredded cheddar cheese


Then, I added about 1/2 c. of Panko (NO EGG!), mixed it all together, and formed them into patties:


I refrigerated these for about 2 hours prior to dinner.  It allowed all the garlic and onion to release into the meat.  Also, the soy sauce and balsamic are super flavorful – more so after a few hours in the box.  You could grill or broil these, but I chose to cook them in my 10″ skillet.  Then, I WALKED OUT INTO MY FRONT YARD AND HARVESTED LETTUCE, Y’ALL.  No, really.  How cool is that?

        It really just depends on how big or small you make your burgers. You could even make them sliders!

      These looked really good so I made them for dinner tonight. I was disappointed with the results. The texture was mushy, not like a burger at all.

        Jodie, If they seemed a bit mushy, you might want to try adding some additional panko. Also, keep in mind that ground chicken and turkey are a lot more delicate than ground beef so don’t overmix it. Tweak it and try again – let me know what works! 🙂

        Yes, they can be frozen.They are just as good. I was going to make these for me, instead of beef burgers my husband liked to eat. He wanted to try one, now it is the only burger he eats at home.

      Absolutely, just make sure you keep an eye on them because turkey is denser than chicken and cooking times may vary. 🙂

      Jessica, you don’t have to use Panko, you could try almond meal, cornmeal, or even run gluten free bread crumbs through a food processor. I’ve heard Glutino makes gluten free Panko, but I haven’t tried it. Just use your discretion with the amount and be sure to let me know how they turn out!

      I always use my meat thermometer to take the internal temp, I don’t take any chances with meat! You can bake, grill, or fry these in a skillet but make sure the temp reaches 165 degrees!

    when I made these today my onion, spinach, and garlic mix was made into more of a paste like pesto. So my burgers were green which is cool but a lot softer than I thought they would be so I doubled the Pablo to add some firmness. Do I just not chop them quite as much? I’m super excited to try them.

      Meghan, the taste is probably the same but I would try not to purée them so much next time. You’re looking for a rough mince, not a pesto consistency ideally. Let me know if that works better for you next time around!!

    I absolutely love these burgers, thanks so much for sharing! I’m making them for the 3rd time tonight & my picky 14 year old loves them.     I made these burgers last night and loveddddd them! I used two pounds of ground chicken. I didn’t see how many pounds of chicken you used and tried to guess from the photo. For future reference, how many pounds did you use? 🙂 I also saw a woman commented asking if they were 21 day fix approved, and they are!       I am trying this recipe tonight. I just started the 21 day fix. Brianna how would you break this down to the containers, oblivious 1 red.but what about green and possibly yellow?

        Hi Kathy!

        I hope you are loving the 21 day fix! It is such an awesome workout/eating plan that truly works 🙂 As for the burgers, it depends on the size of your burgers as to how you would count the containers. I would say put your actual meat in a red container and just use 1 to 1 1/2 red containers per burger. The blue container is actually more than 1/4 cup so I don’t even count the cheese because it’s such a small amount spread out over 4-6 burgers (as per my coach). But, if you use more, I would count it as half a blue. The Panko crumbs I count as a yellow. So split that out between the 4-6 burgers. It usually counts for 1 yellow. I count the teaspoons as 1 (although they are so small split out over the burgers that you really don’t need to count them, but I do because of sodium intake).The spinach for each burger I count as 1 green as well. So each burger total would be 1 to 1 1/2 red, 1/2 blue (if more cheese), 1 yellow,1 tsp and 1 green. Sorry for the long explanation 🙂 I hope this helps!

      Well, you just put the cheese right on top. It will melt rapidly if you keep the heat on the pan and tent it with a lid or a piece of tin foil.

    Ok,looks amazing! BUT may seem like a dumb question, how do u wilt the spinach?

      Bobbi, there is no such thing as a dumb question! I wilt the spinach by placing it in a skillet over medium heat (with or without oil) until it wilts. I think you can do it in the microwave as well, but I’ve never tried that technique.

    Hi!!! That looks delicious. Question: Is it necessary to wilt the spinach first? Also, did you measure the 4 oz before it was wilted or after?

    This recipe will be perfect for me and my husband. We already eat ground turkey but I also wanted to try ground chicken, so this will be our opportunity. He loves to use our smoker so this will probably be awesome smoked. Thanks for the recipe.

    Ok. This was pretty amazing! Because I am a student on a budget, I made a few substitutions in order to utilize things I already had at home.

    I used…….
    kale instead of spinach; about 2 cups
    Almond flour instead of Panko; about ¾ cups
    A mix of feta, Parmesan, and mozzarella instead of the cheddar
    Oh and I added a couple dashes of liquid smoke…because I love smoked everything.

    Anyway, it was amazing, even with changes.

    I hope you guys enjoy it as much as I did.

    Delicious recipe! I added fresh basil to the spinach mixtures, omitted the chili powder, and used Parmesan cheese instead of cheddar. Even my picky kiddo enjoyed it! Will definitely make again!

      Can someone tell me how long you cooked these or at what temp and how longed you baked them? I just tried these and they were almost burned before they got to 165 degrees with meat thermometer.

    Just saw an old “Good Eats” show with Alton Brown making meatballs – he said adding breadcrumbs/panko and refrigerating allows breadcrumbs to soak up moisture and keep meatballs, or in this case, burgers moist when cooked. Can’t wait to try this recipe!!

    Oh my goodness…this is the best chicken patty I’ve ever had. I was out of cheddar and spinach but used Parmesan and the spring onion mix. This patty was moist with good texture and mouth feel. I am a spicy girl but the fam is not. I will make these patties again and spice it up a notch or two or three. Thanks so much for the recipe.

    Hello! I just want you to know that I found this recipe on Pinterest a few years ago and I use it all the time. I usually don’t bother wilting the spinach and sometimes just use onion and leave out the green onions but it is always fabulous with turkey or chicken. Thanks for sharing your creation.
