Chicken Burgers + My First Lettuce Harvest!

10 Jun

Don’t you love it when you make something that tastes so incredibly good and you don’t feel bad about it because its healthy?!  I love when that happens.  No doubt this would be “cleaner” if I had omitted the cheese, but….who the heck wants to omit cheese.

chickburgerfinal3

First, throw this into a food processor:

  • 4 oz. wilted spinach
  • 1/2 small onion
  • 1 clove of garlic
  • 2 green onions, roughly chopped

ChickBurg1

ChickBurg2

Try not to drool into the food processor when your kitchen becomes overwhelmed with the smell of fresh garlic and onion.  Then, stir this mixture into 1 lb. ground chicken  and add:

  • 2 T. balsamic vinegar
  • 2 t. soy sauce
  • 1 t. lemon juice
  • 1/2 t. chili powder
  • 1/4 c. shredded cheddar cheese

ChickBurg3

Then, I added about 1/2 c. of Panko (NO EGG!), mixed it all together, and formed them into patties:

ChickBurg4

I refrigerated these for about 2 hours prior to dinner.  It allowed all the garlic and onion to release into the meat.  Also, the soy sauce and balsamic are super flavorful – more so after a few hours in the box.  You could grill or broil these, but I chose to cook them in my 10″ skillet.  Then, I WALKED OUT INTO MY FRONT YARD AND HARVESTED LETTUCE, Y’ALL.  No, really.  How cool is that?

How many patties does this recipe make?

      • SOLEfortheSoul October 18, 2014 at 7:58 am #

It really just depends on how big or small you make your burgers. You could even make them sliders!

    • Jodie January 24, 2015 at 10:18 pm #

These looked really good so I made them for dinner tonight. I was disappointed with the results. The texture was mushy, not like a burger at all.

      • SOLEfortheSoul June 5, 2015 at 11:13 am #

Jodie, If they seemed a bit mushy, you might want to try adding some additional panko. Also, keep in mind that ground chicken and turkey are a lot more delicate than ground beef so don’t overmix it. Tweak it and try again – let me know what works! 🙂

    • leslie February 24, 2016 at 5:32 pm #

how long did you leave in the oven?

  2. Amanda November 1, 2014 at 7:14 pm #

Made these twice (and again tonight) absolutely DELISH! Paired it with maple glazed acorn squash and roasted garlic broccoli..was a GREAT hit with everyone (even my pickiest eater) thanks for sharing!!

    • Amanda November 1, 2014 at 7:15 pm #

How many pounds of chicken did you use?

  4. Jessie January 16, 2015 at 11:11 am #

Could you freeze these once made into patties?

    • SOLEfortheSoul January 16, 2015 at 11:12 am #

I dont see why not, i havent tried to so if you do let me know how they hold up! 🙂 Thanks for stopping by!

      • Evel May 7, 2015 at 3:08 pm #

Yes, they can be frozen. They are just as good. I was going to make these for me, instead of beef burgers my husband liked to eat. He wanted to try one, now it is the only burger he eats at home.

      • SOLEfortheSoul May 18, 2015 at 7:00 pm #

That’s awesome!! Thanks for leaving a comment!! 🙂

Can you use ground turkey instead of chicken?

    • SOLEfortheSoul January 29, 2015 at 2:37 pm #

Absolutely, just make sure you keep an eye on them because turkey is denser than chicken and cooking times may vary. 🙂

  6. Jessica February 5, 2015 at 6:05 pm #

Hi there! Do you have to use Panko? I love this recipe but I can’t have gluten. Thanks so much!

    • SOLEfortheSoul February 5, 2015 at 6:08 pm #

Jessica, you don’t have to use Panko, you could try almond meal, cornmeal, or even run gluten free bread crumbs through a food processor. I’ve heard Glutino makes gluten free Panko, but I haven’t tried it. Just use your discretion with the amount and be sure to let me know how they turn out!

    • SOLEfortheSoul February 10, 2015 at 8:52 pm #

Jessica, you can use ground almond meal, cornmeal, or gluten free Panko!

    • Phyllis May 27, 2015 at 6:27 pm #

the BEST panko style breadcrumbs I’ve ever had – chopped rice or corn chex!! same texture and gluten free!

      • SOLEfortheSoul May 27, 2015 at 6:31 pm #

Nice, thanks Phyllis! I will try it with the corn chex next time 🙂

  7. Patricia February 12, 2015 at 12:58 am #

What temperature do you bake these at and how long? Or how long did you fry each side for? I think I am gonna try these for dinner tomorrow night! Thank you. Can’t wait to make these

    • SOLEfortheSoul February 12, 2015 at 8:43 am #

I always use my meat thermometer to take the internal temp, I don’t take any chances with meat! You can bake, grill, or fry these in a skillet but make sure the temp reaches 165 degrees!

      • stacey March 30, 2015 at 1:52 pm #

What temp would you bake this at?

  8. Nikki February 20, 2015 at 11:16 pm #

Is this 21 day approved ?? How many containers is it sorry I’m a newbie and found this under a 21 day fix search

    • SOLEfortheSoul February 21, 2015 at 11:12 am #

Nikki, I’m sorry I’m not familiar with 21 day fix so I’m not qualified to answer that! 🙂

  9. katie February 23, 2015 at 3:28 pm #

Does the t stand for tablespoon or teaspoon?

  10. Meghan March 10, 2015 at 4:43 pm #

when I made these today my onion, spinach, and garlic mix was made into more of a paste like pesto. So my burgers were green which is cool but a lot softer than I thought they would be so I doubled the Pablo to add some firmness. Do I just not chop them quite as much? I’m super excited to try them.

    • SOLEfortheSoul March 10, 2015 at 5:03 pm #

Meghan, the taste is probably the same but I would try not to purée them so much next time. You’re looking for a rough mince, not a pesto consistency ideally. Let me know if that works better for you next time around!!

  11. Tikisha March 22, 2015 at 4:35 pm #

    What’s Panko

    • Shirley Schutt April 3, 2015 at 9:27 pm #

Course crumbs(not sure if bread or what?)

  12. Shanequa March 23, 2015 at 10:11 pm #

    Great job!!this looks Awesome

  13. Desiree franklin May 20, 2015 at 6:30 pm #

I didn’t see your comment to add the Pablo so I didnt. The burgers still came out fine and held together with no problem.

  14. Pamela May 26, 2015 at 9:17 pm #

I absolutely love these burgers, thanks so much for sharing! I’m making them for the 3rd time tonight & my picky 14 year old loves them. I had misplaced my link to your page about a month ago (yes I can misplace a link, obsessive pinning on Pinterest 😉 ) and I made another version that called for bread crumbs. I didn’t like that version nearly as well. These flavors are so clean & light… love, love, love…

    • SOLEfortheSoul May 26, 2015 at 9:22 pm #

Thank you so much Pamela and thanks for coming back to share!!! 🙂

  15. Briana Marie May 30, 2015 at 8:55 am #

I made these burgers last night and loveddddd them! I used two pounds of ground chicken. I didn’t see how many pounds of chicken you used and tried to guess from the photo. For future reference, how many pounds did you use? 🙂 I also saw a woman commented asking if they were 21 day fix approved, and they are! It’s a Beachbody workout that focuses on portion control and healthy eating 🙂 So happy I found this recipe on Pinterest, it’s amazing! Thank you!! 🙂

    • SOLEfortheSoul May 30, 2015 at 8:56 am #

Awesome Briana! Thanks for letting me know about the 21 day fix thing :). I used 1 lb here!

    • Kathy September 12, 2015 at 6:08 pm #

I am trying this recipe tonight. I just started the 21 day fix. Brianna how would you break this down to the containers, oblivious 1 red.but what about green and possibly yellow?

      • Briana Marie October 11, 2015 at 8:18 pm #

        Hi Kathy!

I hope you are loving the 21 day fix! It is such an awesome workout/eating plan that truly works 🙂 As for the burgers, it depends on the size of your burgers as to how you would count the containers. I would say put your actual meat in a red container and just use 1 to 1 1/2 red containers per burger. The blue container is actually more than 1/4 cup so I don’t even count the cheese because it’s such a small amount spread out over 4-6 burgers (as per my coach). But, if you use more, I would count it as half a blue. The Panko crumbs I count as a yellow. So split that out between the 4-6 burgers. It usually counts for 1 yellow. I count the teaspoons as 1 (although they are so small split out over the burgers that you really don’t need to count them, but I do because of sodium intake). The spinach for each burger I count as 1 green as well. So each burger total would be 1 to 1 1/2 red, 1/2 blue (if more cheese), 1 yellow,1 tsp and 1 green. Sorry for the long explanation 🙂 I hope this helps!

How much chicken did you use for this recipe/quantity of ingredients?

    • Natali June 10, 2015 at 11:30 pm #

Oh! You already answered in a previous post. Thanks

  17. gloria poole June 17, 2015 at 1:07 pm #

how does the cheese get on top after they are cooked?

    • SOLEfortheSoul June 21, 2015 at 7:34 pm #

Well, you just put the cheese right on top. It will melt rapidly if you keep the heat on the pan and tent it with a lid or a piece of tin foil.

  18. Yvonne June 21, 2015 at 2:50 pm #

I’ve made it with ground turkey 3 times & it was excellent! Will try with chicken soon. Thanks for sharing!

  19. Lori June 24, 2015 at 8:08 pm #

Made these tonight and they were awesome. They made 4 nice size patties that were flavorful and moist. What’s even better about them is that there is no bun required. Thanks SolefortheSoul!

  20. Bobbi July 1, 2015 at 9:56 pm #

Ok,looks amazing! BUT may seem like a dumb question, how do u wilt the spinach?

    • SOLEfortheSoul July 2, 2015 at 6:21 pm #

Bobbi, there is no such thing as a dumb question! I wilt the spinach by placing it in a skillet over medium heat (with or without oil) until it wilts. I think you can do it in the microwave as well, but I’ve never tried that technique.

  21. Natalie September 7, 2015 at 11:19 am #

Hi!!! That looks delicious. Question: Is it necessary to wilt the spinach first? Also, did you measure the 4 oz before it was wilted or after?

This recipe will be perfect for me and my husband. We already eat ground turkey but I also wanted to try ground chicken, so this will be our opportunity. He loves to use our smoker so this will probably be awesome smoked. Thanks for the recipe.

  22. Jessica October 11, 2015 at 7:34 pm #

Ok. This was pretty amazing! Because I am a student on a budget, I made a few substitutions in order to utilize things I already had at home.

    I used…….
kale instead of spinach; about 2 cups
Almond flour instead of Panko; about ¾ cups
A mix of feta, Parmesan, and mozzarella instead of the cheddar
Oh and I added a couple dashes of liquid smoke…because I love smoked everything.

Anyway, it was amazing, even with changes.

I hope you guys enjoy it as much as I did.

  23. Kathy October 12, 2015 at 3:48 pm #

Love these! Changed it up and using the recipe to make meatballs tonight. They are in the oven baking right now and smell amazing!

  24. Isabella Fontana November 28, 2015 at 8:41 pm #

These chicken burgers look amazing….question how about using mince Turkey and do you have the nutrition fact on it……on weight watchers so it would help me calculate the points….greatly appreciate it!

  25. Nicole February 18, 2016 at 2:20 pm #

Hi! Do you think these would work as meatballs? Maybe if I added egg?

  26. shawn February 28, 2016 at 7:55 pm #

I made these for my family tonight on my george foreman grill, and the absolutely loved them. Moist and full of flavour. Thanks so much!!

  27. Barb April 4, 2016 at 4:27 am #

    Sounds delicious! Will try it!!

  28. Andrea June 6, 2016 at 8:22 am #

Delicious recipe! I added fresh basil to the spinach mixtures, omitted the chili powder, and used Parmesan cheese instead of cheddar. Even my picky kiddo enjoyed it! Will definitely make again!

    • Mary July 5, 2016 at 1:33 pm #

Can someone tell me how long you cooked these or at what temp and how longed you baked them? I just tried these and they were almost burned before they got to 165 degrees with meat thermometer.

  29. Nicole Fragala July 17, 2016 at 9:45 pm #

I loved them! Will be making them over n over again. Thank you for sharing! !!!
